Eggless Custard Muffins with Speculoos

Muffins, these baked goodies makes a prefect car snacks, if kids are hungry or craving for something sweet, muffins can helps a lot to fill their tummy. Obviously if we plan of a long drive or a trip, i'll bake couple of muffins just to carry with us and keep them just next to me in case if we feel like having something while driving. Muffins are seriously a prefect finger food,you can have without any fuss. After roasted lotus seeds and salt biscuits my today's post goes to this week's blogging marathon as i picked Car snacks as theme. Today's recipe is eggless muffins with custard powder and crushed speculoos biscuits. These biscuits are easily available here. The spices used in Speculoos biscuits makes the difference from other biscuits. If you dont feel like adding spices in your bakes, just add some speculoos and see the difference. I used some crushed biscuits as topping to my muffins, the crispiness of this baked biscuits brings a different texture to this custard muffins.

The addition of speculoos biscuits turned this muffins more flavourful and totally a different muffins i have tried until now.This muffins are eggfree, butterfree, so one can have this muffins without any guilt. If you want to go with butter and eggs,feel free to add them, but we enjoyed thoroughly this eggless custard muffins for our evening snacks with a cup of tea, just loved it.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#46. 

custard muffins with speculoos


1cup All purpose flour
1/2cup Custard powder
1tsp Baking powder
3/4cup Milk
1/4cup Oil
1/2cup Sugar
pinch Salt
1/2cup Crushed Speculoos biscuits
1/2tsp Vanilla essence

Grease and line the muffin mould,keep aside.

Sieve together the flour, custard powder, baking powder, salt in a bowl.

Mix together the oil,milk, sugar and vanilla essence in a bowl and whisk until the sugar gets dissolves.

Now add the wet ingredients to dry ngredients and mix gently with a spatula,dont overmix the batter.

Pour enough muffin batter to the lined baking mould.

Top each muffins with enough crushed speculoos biscuits, bake for 30-35minutes or until a skewer inserted comes out clean.

Remove from oven and let it cook completely.

Serve.

Hi priya,muffins looks so good,yes it is a perfect snack while driving,even I make muffins for travel,but this looks something different and nice especially with those addition of biscuits,great work priya

my cousin who lives in Holland is coming to visit me in 2 weeks and I already asked her to bring me some speculoos spread as I want to try and make stroopwaffel cookies..now you gave me the idea to make the biscuits just so I can make these delicious looking muffins
